  • Highlights

    Tiff's b-day was yesterday. I had to work, and Mom and I had sign language practice at 7. Kraig made his amazing chicken enchiladas and invited Joel over for dinner. Tiffany made an Oreo pudding pie. There was plenty of food, so Mom and I got to enjoy that when we got home, while Tiff opened the present I got her. I got her a digital picture frame, and she was pretty excited about that!

    I ordered a new cell phone online on my birthday. It's a wine colored LG VU touch screen. It's supposed to arrive today. I'm pretty jazzed about it!

    The Oregon Ducks play the Oregon State Beavers tomorrow night. Whoever wins that game goes to the Rose Bowl. GO DUCKS!

    Thanksgiving was wonderful. We went to a new location this year, because the owner of the house we used to go to isn't renting it out anymore. Time for a new tradition!

    God has really been working in me. I don't have time right now to say much, because I need to leave for work. But sometimes when we get hurt we tend to put up walls around our heart. It's a way of coping. Sometimes anger and cynicism is a welcome relief from the pain, but it isn't healthy. Anyway, God has been really working on my walls lately. Recently I pretty much spilled my guts to a room full of people, and I was shocked. It's like I just couldn't stop my feelings and confusion from pouring out of me. I've cried so many tears lately, but it's a good thing. I know it's part of the healing.

    Anyway, work calls. Ugh! Happy Wednesday, everyone!

    Sorry guys, I just can't seem to get on Xanga much these days. I am SO busy. Things have really picked up at work, and due to a couple people having to have time off due to family medical issues, I'll be working 6-day weeks probably almost every week from now until Christmas. The extra money will definitely come in handy, but I know I'll be glad when I'm back to having both of my days off again.

    My steady readers probably remember that I've definitely had some emotional issues in the last few months. Things have settled down a bit (thank you for the prayers!), but it hasn't gone all the way away. On top of that, I've been stressed at work a lot because of the holidays. Sometimes retail is the pits! Anyway, a friend has noticed that I've been stressed, and last night, made a point of being there for me and letting me know he cares. It was so sweet, and I really need to let him know what a big impact that made. I think I smiled more today than I have in a while.

    I hate winter. I have informed my mom that I want an electric blanket for my birthday. Something I would get a lot of use out of, for sure!

    I'm really tired, and I can't think of anything else to talk about. I hope you all had a good Monday!

  • Busyness!

    Before I talk about how busy I've been, I want to tell you all about something that's so exciting. Recently a lady went through Kraig's best buddy Joel's line at the grocery store where he works. Joel struck up a conversation with her, and discovered that she had recently been diagnosed with cancer. Interestingly, it's the same form of cancer that Joel's mom underwent treatment for a few years ago. Joel gave the lady his mom's phone number (I think) and the 2 ladies had a long phone conversation. Sis. Sarah invited her to church, and told her that we would pray for her. She came that Sunday, and the whole church prayed. That was two Sundays ago. Last Sunday at church we heard that the lady had been back to her doctor, and found out that the cancer is gone! It's amazing! God is so awesome!

    Well, my entry title was about being busy. We've had so much going on, that I've only been able to cook my Saturday dinner about once a month for the last few months. Two Saturday evenings this month have been/are being taken up with making tamales for our church fundraiser. It's fun, but it's hard on the back after a couple hours! Last Saturday evening we had a youth committee meeting at Andy's house to plan the youth schedule for the next couple of months. A lot of the youth schedule has to do with practices for our New Year's Eve program. Oh, and this year the youth department is in charge of that. So guess what? Along with another committee member, I'm in charge of planning the big potluck! I hope I think of everything!

    Early in the spring, my work hours were cut from 7 hours to 6.5 hours each day. It wasn't a really big deal. I didn't really notice a difference in each paycheck. However, it's had a long term effect. It takes me longer now to recover from big purchases. This week my hours were finally changed back to 12-7 M-F. Thank God! Also, I'll have one 6-day work week soon. I don't like to do that often, because I cherish my days off, but I'm thankful for the chance to earn a bit more for that paycheck.

  • Recipe Tuesday

    Warm Caramel Apple Cake

    Prep Time: 30 min
    Total Time: 1 hour 25 min
    Makes: 15 servings

    Cake
    1/2 cup butter or margarine
    1/4 cup whipping cream
    1 cup packed brown sugar
    1/2 cup chopped pecans
    2 large cooking apples, peeled, cored and thinly sliced (about 2 1/3 cups)
    1 box Betty Crocker® SuperMoist® yellow cake mix
    1 1/4 cups water
    1/3 cup vegetable oil
    3 eggs
    1/4 teaspoon apple pie spice
    Topping
    2/3 cup Betty Crocker® Whipped fluffy white frosting (from 12-oz container)
    1/2 cup frozen (thawed) whipped topping
    Caramel topping, if desired

    1. Heat oven to 350°F. In 1-quart heavy saucepan, cook butter, whipping cream and brown sugar over low heat, stirring occasionally, just until butter is melted. Pour into 13x9-inch pan. Sprinkle with pecans; top with sliced apples.

    2. In large bowl, beat cake mix, water, oil, eggs and apple pie spice with electric mixer on low speed until moistened. Beat on medium speed 2 minutes. Carefully spoon batter over apple mixture.

    3. Bake 40 to 45 minutes or until toothpick inserted near center comes out clean. Cool in pan 10 minutes. Loosen sides of cake from pan. Place heatproof serving platter upside down on pan; carefully turn platter and pan over. Let pan remain over cake about 1 minute so caramel can drizzle over cake. Remove pan.

    4. In small bowl, mix frosting and whipped topping. Serve warm cake topped with frosting mixture and drizzled with caramel topping.

    Crazy Dream!



    So last night I had a dream that I was going around in public naked. I didn't actually plan for it to be that way. I kept wanting to go home and put some clothes on, but people kept asking me to do things for them, and I didn't want to say no. Anyway, finally I got home and was going to put some clothes on when I happened to look at my back in the mirror for some reason. I was horrified and embarrassed! I had a gross amount of hair on my back! It's funny that I was only embarrassed about that, and not about the fact that I was in public naked! Dreams are so crazy sometimes!
